What is gelato and what makes it different from American ice cream? Gelato is Italian ice cream. It is made with milk instead of cream, which allows a lower fat content (only 2–8%) versus American ice cream (15–30%). Less fat means the flavors are more intense. Because the process of making gelato incorporates less air than ice cream, the result is a denser, creamier texture.
